Easy & Healthy Egg in a Mug

1/2 cup egg beaters
1 teaspoon chopped veggies such as bell peppers & onions
1 teaspoon bacon bits (optional)
1 teaspoon diced ham (optional)
2 teaspoons shredded cheese (fat free if you like)
salsa

1/2 cup egg beaters = 2 large eggs

In a mug, add chopped veggies and microwave about 1 minute, or until tender, (if there's any moisture, take a paper towel and try to wipe out as much of it as you can.)  Then add 1/2 cup egg beaters, your meat (optional) and stir.  Microwave 1 minute, take a fork and mix up the egg and veggies.  Then add shredded cheese and some salsa.  Mix together and enjoy. 

This is a very "no fuss", healthy and good recipe for a quick breakfast or snack during the day.  (I got this recipe idea from watching Hungry Girl on Food Network, she has a lot of mug recipes)


Birthday Cake Bark

I came across this recipe on swap-bot.com and I plan to make it for my son's 10th birthday party this month, or maybe I might just make it today, lol


6 oz. dark chocolate
12 oz. white chocolate
3 teaspoons white cake mix
sprinkles

Line a baking sheet with parchment paper. Melt the dark chocolate in the microwave, then pour out on the baking sheet and spread with a knife. Then place in the freezer for a few minutes. Next, melt the white chocolate in the microwave, then mix in the 3 teaspoons of cake mix. Spread the white chocolate on top of the dark chocolate layer, then add your sprinkles on top and freeze for a few minutes, then break into pieces. Yummy!!

Summer Strawberry & Turkey Salad

fresh baby spinach
chopped lettuce
sliced almonds
turkey deli slices (I tear mine into small pieces)
sliced strawberries
shredded cheese
bacon bits
dressing of your choice
croutons (optional)

You can also use pre-cooked chicken chunks, I used turkey deli meat because that's what I had on hand.

Layer all ingredients in a large salad bowl or plate.  Top with your favorite dressing and eat with crackers.

The Best Strawberry Lemonade

2 cups sugar
2 cups water
12 lemons
8 cups cold water
fresh strawberries


Make simple syrup by heating the sugar and water in a small saucepan until the sugar is dissolved completely.


While the sugar is dissolving, slice and juice the 12 lemons, then add the sugar water and lemon juice to the pitcher. Add 8 cups cold water and stir. Take 3-4 large strawberries and dice. Put the strawberries in a food processor and process completely, then add the strawberries to the lemonade and stir well. Serve over ice and add additional strawberry slices to garnish.

Bacon, Egg & Cheese Quesadillas

eggs
real bacon bits
shredded cheddar cheese
pepper
picante sauce
fajita size flour tortillas


Using a non-stick skillet, add an egg, some bacon bits and pepper. Cook egg & bacon on medium heat just until done. Turn off heat. Add some picante sauce and cheddar cheese. Take one flour tortilla and fold in half, then using a spatula, scoop the egg mixture inside the tortilla, laying the mixture on one side, then fold over the other side and place in skillet. Turn heat back on and cook each side until tortilla starts to brown and cheese starts to melt. These are sooooo easy and sooooo good.

Bacon Cheddar Burgers


Simply the best burgers at home I've ever had...These are full of flavor, thick, juicy and the meat doesn't shrink while cooking.

Angus bacon & cheddar patties (I found them at Walmart in the freezer section)
hamburger buns
salt
pepper
optional toppings: lettuce, tomatoe, sliced jalapenos, sliced onions, pickles, mayo, mustard, ketchup.

Preheat a non-stick skillet on high. Add semi-thawed patties, I cook 3-4 at a time.
Salt & Pepper each side and allow each side to cook for a few minutes on high without turning to seal in the juices and allow to brown. Cook a few additional minutes on each side allowing the patties to cook evenly. When juices run clear, and you see no pink, the patties are done.

Easy Chili Cheesy Nachos

Sundays have become chili cheese day at my house, and usually it's chili cheese nachos. Yum!


tortilla chips
Ricos nacho cheese sauce (the spicy flavor)
Hormel chili no beans
sliced jalapenos and diced onions (optional)



I heat the chili and cheese sauce in microwave safe bowls for about 2 minutes each, then stir.
Layer some tortilla chips on a paper plate, then top with chili, cheese and additional toppings if you like. Heat in the microwave for about 40 seconds so everything is good and hot when you're ready to eat.

Pink Lemonade Cookies

These are new from Pillsbury, just mix, bake, frost and eat...so delish!



Anytime Egg Burritos

This is a family favorite, my boys love these and they are so easy for them to just pop in the microwave, heat and eat.

fajita size flour tortillas
scrambled eggs with a little milk and butter
picante sauce
shredded cheese

additional ingredients to add in if you want:
browned breakfast sausage, bacon pieces, diced veggies such as bell pepper, onion and mushrooms, etc. You can pretty much do whatever you like.

In a large non-stick skillet, I add a little milk and butter then my eggs and scramble.
I take a tortilla, add some cheese, then eggs, then picante sauce and either heat and eat right then and there or I wrap in individual snack size bags for heat and eat Anytime of the day or night, store in the refrigerator for 2-3 days or in the freezer for a month. You can thaw out and heat a few seconds at a time so you don't over heat. Ours usually don't last long enough to freeze, lol.



"My kids love it" Chicken Tortilla Soup

My kids aren't big on vegetables, go figure, lol, so I came up with this new version of my chicken tortilla soup, without a lot of veggies and they love it.
It's super easy and super delish.

1 carton of chicken broth
2 chicken bouillon cubes
2 cups of water
1 tablespoon minced garlic
2 tablespoons dried cilantro
1/2 can diced tomatoes w/garlic and onion
1 teaspoon lime juice
2 pkgs. Tyson Southwest flavor chicken chunks
shredded cheese of your choice
diced avocado (optional) my kids like theirs without
tortilla chips

Add all ingredients except avocado, cheese & chips into a large soup pot or sauce pan. Bring to a boil and reduce heat to simmer for about 15 minutes. Serve over crushed tortilla chips and top with cheese and avocado. YUMMO!!!

Easy Beef Stew using leftovers

In a large pot, add leftover roast, carrots and potatoes, cut into chunks, 1 can of green beans, drained, 1 pkg. of stew seasoning, 1 can of tomatoe sauce, 1/2 cup sliced celery, black pepper and about 2 cups of water. Stir together and heat until bubbly, then reduce heat and simmer until juices are thickened. Serve with crackers or cornbread.

Steak Sauce Burgers

4 lean hamburger patties
steak sauce (I use Walmart's brand)
salt & pepper
buns
cheese
lettuce
mustard
any other toppings you like.


In a large skillet, start cooking patties and sprinkle with salt and pepper on each side. Pour steak sauce on each side and add some to the skillet. As the meat cooks, the juices mix with the steak sauce and make a gravy. Assemble your burger however you like it, and the patties are full of flavor. This would also be good with bacon, onions and mushrooms. Yum!

Low Fat Mini Pizza Rolls

1 pkg. reduced fat crescent rolls
mini pepperonis (use turkey pepperoni for an even lower fat version)
low fat shredded mozzerella cheese
pizza sauce

Separate crescent rolls. Spread some pizza sauce, then top with cheese and mini pepperonis. Carefully fold starting at the top and roll. Place on greased baking sheet and bake until golden brown.

Sugar Free Banana Chocolate Chip Bread

4 mashed bananas
2 tbsp. sweetner (I use Splenda)
1 egg
1 3/4 cups flour
3 tsp. baking powder
1/4 tsp. salt
1/4 cup mini chocolate chips
1/4 cup chopped pecans (optional)

Mash bananas and add egg, then add remaining ingredients one at a time and mix well. Batter will be thick. Bake in 350 degree oven until brown about 40 minutes. Makes 1 large loaf or 2 small. Let cool completely before turning out of pan and slicing. Test the center with a toothpick to see if it comes clean for doneness.
