Egg & Cheese Breakfast Burritoes

My youngest son's favorite...

flour tortillas
sliced cheese
salsa
eggs
butter
milk
salt & pepper

Scramble as many eggs as you like, for about 6 servings, you will need at least 6-8 eggs. I use more because I like to make up extras for eating later. Wrap in plastic wrap and freeze or put in fridge and microwave about 20 seconds or so until heated through. For frozen, defrost first and then heat.
Mix eggs, 2 tablespoons of butter, a splash of milk, salt, pepper and 2 tablespoons of salsa. Scramble, then add a slice of cheese to the center of a flour tortilla, add egg scramble and microwave about 12 seconds, then fold and eat.

Super Easy, fun to make and tastes great too.


It's pretty much like making a grilled cheese except you cut a hole out of the center of the bread with a bisquit cutter and go from there. I got this idea from Pioneer Woman, and I made mine a little different by adding toppings such as salsa and shredded cheese. You could also make a french toast version by sprinkling cinnamon sugar and then pouring syrup and eating, yummy!

Easy Cheesy Mac & Cheese w/Smoked Sausage

1 pkg. Kraft homestyle mac & cheese (prepare as directed)
1 pkg. smoked sausage, diced and browned in a skillet
Just before placing in the oven, mix in the sausage and bake as directed on mac & cheese pkg. Serve as a meal or with a salad and rolls.
