Easy Salisbury Steak

4-6 lean ground beef patties (I buy the pre-formed one's from the store.)
2 pkgs. McCormicks mushroom & herb brown gravy (prepare as directed on pkg.)
salt
pepper
1/2 cup diced onion

Season beef patties with salt & pepper on both sides. Place in a non-stick skillet and cook on each side until done. Pour prepared gravy and diced onions over the steaks. Simmer on low until good and heated through, and onions are tender.

(I serve with mashed potatoes & corn or a salad.)
The longer you let it simmer on the stove, the thicker the gravy gets.

Tuna Salad

3-4 cans tuna w/water (drained)
1 diced tomato
2 diced pickles
3 diced boiled eggs
shredded lettuce
celery salt
black pepper
salt
mayo
mustard

In a large bowl, add the tuna, tomatos, pickles & boiled eggs. Mix together and add about 1 cup of shredded lettuce, 2 tsp. celery salt, 1 tsp. black pepper, 1 tsp. mustard, 1 tsp. salt and just enough mayo to combine all ingredients without becoming too mushy, (so add just a little mayo and stir, then add more as needed.) Taste and if you need to add a little more celery salt or pepper for your taste, then do. You can also add a dash of hot sauce for a little kick :-)
Serve on bread or eat with crackers.

Sausage Jambalaya

1 box Zatarin's jambalaya mix
1 pkg. smoked sausage
1 can ranch style beans

In a large skillet or sauce pan, prepare Zatarin's mix as directed on box. Add diced smoked sausage and a can of ranch style beans. Cover and let simmer until rice is done. Serve with salad, chips or crackers.

Steak Lovers

If you love steak, I have to recommend the Rib Eye...it's thick, juicy and so tender and the flavor is wow! It's great cooked indoors or out. I use my indoor grill to cook ours. Here's what I season mine with.

McCormick's Steak Seasoning
Steak Sauce

Put seasoning and sauce on both sides of steak and grill until your steak is as done as you like, then enjoy!!!! It's truly mouthwatering.

Taco Meatloaf

2 lbs lean ground beef
2 eggs
1 cup bread crumbs
1 small diced onion
1 can rotel diced green chilies and tomatoes
1 pkg. taco seasoning mix
jar of favorite salsa
cheddar cheese

In a large bowl, combine all ingredients except for salsa and cheddar cheese, mix until blended evenly through. Shape into a loaf and bake at 350 for 30 minutes, remove from oven and add some of your favorite salsa on top. Place back in oven and continue cooking for another 30 minutes. Remove from oven and add some shredded cheddar cheese on top. Let sit for 5 minutes before slicing. For a little extra spice, add some chopped jalapenos to the mixture before baking.
Serve with a salad and mashed potatoes or spanish rice and beans.

Italian Meatloaf

1 lb lean ground beef
1 pkg. ground italian sausage
2 eggs
1 cup italian bread crumbs
2 tsp. minced garlic
2 tsp. dried oregano
2 tsp. dried basil
1 can italian diced tomatoes
1 cup shredded parmesan cheese
shredded mozzerella cheese
your favorite spaghetti sauce or marinara sauce

In a large bowl, add all ingredients except for spaghetti/marinara sauce and mozzerella cheese, mix well until blended evenly. Shape into a loaf and bake on 350 for 30 minutes. Remove from pan and add sauce to the top of the meatloaf. Put back in oven and continue baking for another 30 minutes. (I like to cook my meatloaf on a broil pan so the fat juices can drip down away from the meatloaf.) Remove from oven and top with some shredded mozzerella cheese and let sit for 5 minutes before slicing. Serve with a salad, mashed potatoes and garlic bread.

Why is Meatloaf Disliked so much.....?

Everytime I mention the word "meatloaf" at my house I immediately get all kinds of moans and groans and the words "yuck" and "gross" start coming out of my family's mouths...I don't get it, I love meatloaf, and you can fix it many different ways. Well, I've come up with a couple of variations from the traditional style that I think will become family favorites...we'll see. Oh, and did I mention that a cold meatloaf sandwich is awesome!!! :-)
